Much like the beach, The Wedge Culinary Center test kitchen at Pro Reps West is open to everyone, including foodservice professionals, hospitality workers, healthcare nutritionists, foodservice consultants, and anyone with a passion for the culinary arts. What is "The Wedge?"

At Pro Reps West, it feels like an epic New Year’s Eve party every day. Fueled by a passion for California’s foodservice industry, our sales and marketing teams spent much of last year carving out the perfect redesign to create a cranking culinary education center.

It may seem like culinary arts and surfing sports have nothing in common. Take a deeper look, and it’s obvious both talented groups feel respect when two unstoppable forces crash together to create one perfect experience. For surfers, The Wedge is a destination in Newport Beach, CA, to seek the perfect barrel. At Pro Reps West, The Wedge is a bit less intimidating but as exciting and impactful in the fast-paced foodservice world. 

The Wedge test kitchen is set up with a wide range of manufacturers’ products and commercial kitchen equipment for interactive learning about:

  • restaurants and chains custom solutions
  • hands on education
  • K-12 nutrition foodservice solutions 
  • college and university on-campus dining 
  • and much more!

What Happens in the Culinary Education Center?

The Wedge is a place for foodservice lovers in Northern and Southern California and Nevada to come together, continue learning, and further propel technology and creativity across all foodservice industries. It’s no ordinary test kitchen, much more than a place to watch some of the industry’s most experienced chefs express themselves through food. The PRW culinary education center provides hands-on training with culinary artists only found at The Wedge. 

PRW is serious about foodservice, and while we consider ourselves humble, we have to brag about three Chefs on fire at The Wedge. Here are a few meaty things to know about these hash-slinging superheroes: 

  • Chef Mike Corlett is a culinary artist with more than 20 years of cooking experience within restaurants, catering companies, foodservice consulting firms, and too many more to list on this menu. In 2023, Chef Corlett embarks on year number seven with Pro Reps West. Wait until you see what’s cooking in his oven. 

  • Chef Juno Ignacio brings another 20 years of experience to the PRW table. Thirteen of those years Chef Ignacio spent serving in the United States Air Force. His culinary skills kept the brave men and women of the Air Force happy. We salute Chef Juno, and you will, too, after he helps you create culinary art at The Wedge.

  • Chef Leah Miller is a certified American Culinary Federation Chef. Chef Miller joined Pro Reps West ten years ago after showing off her Los Angeles cooking chops in the kitchen of Patina and Wolfgang Puck. 

Chefs Corlett, Ignacio, and Miller teach in-person with an undeniable zest in the culinary education center. They assist in training attendees through a charcuterie of personalized demos, hands-on food preparation techniques, and interactive cooking with innovative foodservice equipment.
